pasta-spinach-tofu recipe

Pasta with Spinach and  Tofu  Sauce

 This is an easy and healthy recipe that is good !! I modified it to my
taste and hope you will like it.
	 
 Use a character mold pan to make this in. 

12    ounces mori-nu lite tofu, firm, drained
4     cloves garlic
1/2   cup chopped onion
2     cup chopped fresh spinach leaves
1/2   cup fat free cottage cheese
1/4   cup fat free cream cheese
1/4   cup bottled salsa 
1/4   teas cumin
1/2   teas oregano / basil
l/4   teas cinnamon
1/4   teas salt or to taste

1     pound angel hair pasta

-In a food processor, puree tofu, garlic, onion, spinach, cheese, salsa
and spices and salt to a smooth paste.
      
 -In a large pot, bring salted water to boil.  
Add the pasta and cook until al-dente.
-Drain the pasta.  Add pasta while it is hot to the tofu paste 
and mix well until all pasta is coated with the tofu paste.

-lightly spray a cake pan, a character shaped one is fun, with Pam and
dust lightly with fat free parmesan cheese ( 2 Tablespoons )

-Stuff the cake pan with the pasta. Press the pasta very firmly 
in the pan.
-Bake in a 375 degree oven for 35 minutes.

If using a character mold, use mushrooms as buttons, red pepper strips as
a smile, julienne carrots / zucchini/ summer squash for manes or hair ~
have fun and use imagination !!
