Here's a pumpkin pie filling our family enjoys very much.
Process thoroughty:
2 10.5 oz. packages soft silken tofu, lowfat
Then add:
1 16 oz. can solid pack pumpkin or two cups cooked pumpkin
3/4 cups sucanat or other granular sweetener
1/2 tsp salt
1 3/4 tsp. pumpkin pie spice
Process thoroughly. Pour into pie crust. Bake 375 degrees for 60 to 70
minutes or until a toothpick inserted in the center comes out almost clean,
or until it looks firm and slightly cracked in the center.
This is our traditional Hallowe'en pumpkin pie.
