yogurt cheese pie
Yummy, vlf ...the only thing is that the crust is a bit tough, so make it as
thin as you can.
Prepare yogurt cheese:
drain 1 quart Dannon non-fat yogurt in the fridge for at least 10 hours. I
specify Dannon, because it is mild-tasting.
Prepare crust:
1 1/2 c. graham cracker crumbs
3 tablespoons yogurt
1 1/2 tablespons honey
1/4 teaspoon cinnamon
Mix everything well (i mixed it in a food processor). Press into pammed pie
pan with wet fingers. Bake at 350 degrees f for 15 minutes. Let cool.
Gently fold into yogurt grated zest of a lemon, a drop of vanilla, and
enough honey to sweeten to your liking.
Once crust is cool, spoon filling into crust. Top with sliced strawberries
and blueberries (or fruit of your choice). You can make it very fancy -
impresses your friends! Serve, or better yet, chill, and serve later.
btw, the fat content in the crumbs (per 1/8th of a pie) are 1.5 g. There is
no other added fat.
