WHOLE WHEAT PIZZA CRUST
I make a 100% whole wheat pizza crust without any oil. I don't add
anything to replace the oil.
Sometimes I add some fennel seed (or ground fennel) to the dough. I
like a slightly sweet crust, so I add a teaspoon of black strap
molasses to my dough.
Recipe:
3 C whole wheat flour
1 packet or 2.5 t yeast
1 t blackstrap molasses
.5 t salt (helps the yeast action)
extra water, slightly warm (to make dough consistency of choice)
Dissolve yeast in 1/2 C very warm water (125 - 130F. / 52 - 55 C.).
Add molasses to 1/2 C water of same temperature, combine liquids. Mix in
flour and knead for at least five minutes, let proof (rise) 15 minutes.
Punch down and roll out to cover pizza pan, making a lip about
3/4 inch / 2 cm. higher on the outer edge. Put on toppings, bake at
375 F. / 190 C. for about 20 minutes.
