Zucchini pizza crust
As for the zuccini, how about zucchini pizza? I use the zucchini for the
crust (and never measure), but it's about 3c.grated zucchini, 3 egg
whites, 1/2 c. fat free cheese (I use cheddar-more flavor), and 1/2 c.
bread crumbs. I spread it in a cookie sheet and bake for about 10 minutes
at 400. Then remove and pile on sauce and the usual ff toppings
(Mmmmm...mushrooms). Then bake at 400 for 30 minutes or so. This crust
doesn't get crisp, it's just sort of soft. Even my (VERY) picky four year
old will eat it (we've gotten so we tell her that anything green is just
herbs and spices..)
