Potato Salad (two versions)

about 3 pounds red or white potatoes, steamed and cubed
about 1 pound fresh green beans, cleaned, cut into about 1 inch pieces and
steamed til barely tender
1 red onion chopped (or scallions)
toss all gently, dress with seasoned rice vinegar, diluted slightly with water.

Alternative:
use 1 pound package of frozen petit peas
a couple tablespoons of chopped chives
1 teaspoon curry powder (optional)


salt and pepper to taste
