This is my standard savoury sweet potatoes (every Thanksgiving &
Christmas). The original recipe is long lost and I've been winging it
"to taste" for a while. But it seems to be hard to mess up.
Here are some estimates that I think will fill a 1.5 qt casserole dish.
3 jumbo sweet potatoes, washed, cut into teacup-sized chunks, boiled and
peeled
1.5 cups FF sour cream (maybe soy yoghurt will work as a sub)
1 tsp. mace (or nutmeg)
salt & pepper to taste (I like it peppery)
2 egg equivalents (I've used whole, whites, -beaters, and replacer
successfully)
Mix everything but the egg equivalents together and adjust the
ingredients to taste.
Mix in the egg-things and put into a casserole dish.
Bake, covered, about 30 minutes at 350 F.
For a sweet contrast and a taste of home, you can uncover and top w/
kosher marshmallows for the last 10 minutes of cooking.
