Scalloped Potatoes with GARLIC! cream sauce
Here is a great dish for all of you garlic lovers out there.
5lb potatoes
onion (to taste)
salt (to taste)
pepper (to taste)
flour (as needed for layers)
2 heads of garlic
1/2 c. fat-free sour cream
1/2 c. (more or less) veggie broth
Wrap each head of gralic separately in foil that has been lightly
sprayed with nonstick cooking spray. Bake at 400F. for approxamately 30
min. or until they feel soft when squeezed. Remove from oven and allow
to cool till they can be handled.
While garlic is baking, peel and slice potatoes. Layer potatoes in
large oven proof dish with sliced onion, salt, pepper, and a bit of
flour to thicken the sauce. Cover potatoes and start in oven at 400F.
Peel garlic cloves and either mash with a potato masher or blend in a
food processor to desired consistency. Add sour cream and broth to form
a creamy sauce. Heat sauce and pour over potatoes. Continue baking
potatoes for a total of about an hour or till tender.
My family ate this right up!
