Seasoned Potatoes
4 large white potatoes, scrubbed
1 small yellow onion
1/8 cup low-sodium soy sauce
dash ground black pepper
dash paprika
Peel the potatoes if you wish, and slice into 1/8-inch slices. Slice the
onion thinly and separate into rings. Place the potatoes in a large covered
casserole dish and lay the onions over them. Season with a few sprinkles of
soy sauce, some black pepper, and a little paprika. Cover and bake in a
350-degree oven for 45-50 minutes, or microwave on high for 10-15 minutes.
(my notes: I used medium-sized red potatoes, non-peeled, and regular soy
sauce. I cooked for 10 minutes in the microwave.)
