sweet potato fries
I make these all the time. Because the "jewel yam" or dark
orange-fleshed sweet potato is so sugary and starchy, don't
pre-bake it or it will be mush. I scrub the skins hard, cut off
the ends, and cut into long french-fry shapes (leaving the skins
on). I spray them ever-so lightly with cooking spray (just the
surfaces that are showing, a 2-second spray = 2 grams fat for 2
potatoes). Then cook them in a 400 degree oven for about 15
minutes, then turn on the broiler to get them nice and brown,
another 3-5 minutes. Yum!!! A great party food. Serve with
Tabasco. :) --Eli.
