I just made these last night with a colorful combination of new red,
white and purple potatoes!
Sal's unfried potatoes (for two)
10 new red potatoes (the little guys)
1 medium onion
2-3 sun dried tomatoes
fresh ground black peper
1 cup veggie broth (mine was ch*ck*n flavored)
1/3 cup fresh sliced mushrooms
Put veggie broth and coarsely chopped onion into a frying pan and bring to
a boil while you slice the potatoes into about 1/4 inch thick slices. Toss in
potatoes, cut the sun dried tomatoes into small pieces and toss them in. Add
pepper to taste. (I used a lot because I like mine kind of hot!) Toss in
sliced mushrooms.
Simmer until all the broth has been mostly absorbed by the potatoes. Really
yummy and simple. My husband went nuts over them. (He doesn't usually try
my stuff these days.)
