Hi gang. Just got my latest copy of Veggie Life and there was
a very interesting recipe in there. Unfortunately I no longer
have my store of frozen, overripe bananas so I have to wait
a couple of days before I can try this. :-(
Banana Rice Pudding
-------------------
3 cups rice milk or nonfat milk
1 cup short grain rice (arborio, sweet, etc)
3 bananas, mashed (I assume they meant to say "very ripe bananas")
1/2 tsp nutmeg
Preheat over to 350F. Mix all together well and pour into a
1 1/2 qt casserole. Bake for 1 to 1 1/2 hours, stirring
occasionally, until rice is tender. Makes 4 cups.
