Here is my rice pudding recipe:
2 cups uncooked brown rice cooked
In another bowl combine enough milk (I use 1%) to cover the rice
and some type of egg replacement to equal about 4 eggs. I have used
egg beaters with success. I then add a couple of tablespoons of sugar,
more or less vanilla depending on personal taste and raisins.I mix this
all together and then whisk it into the rice (this breaks up the brown
rice lumps). Sprinkle cinammon on top and bake at 350 until set. It
usually takes an hour or an hour and half or so. It should be nicely
browned on top.
