Rice Pudding
3 cups skim milk or soy milk
1 large stick cinnamon
1 cup uncooked brown rice
2 cups water
1/4 tsp. salt
1 long strip organic orange peel
3/4 cup Sucanat or sugar
1/4 cup raisins
1 tsp vanilla or 2 Tbsps orange juice concentrate
Heat milk and cinnamon in a small pan over medium heat until milk is
flavored by the cinnamon, about 15 minutes.
Combine rice, water and salt in a 2 -3 quart pan. Bring to a boil, stir
once or twice. Place orange peel on top of rice, cover and simmer until
liquid is absorbed. Discard orange peel. Strain milk and stir into rice.
Add sugar and simmer until thickened. Stir often. add raisins and vanilla
and simmer another 10 minutes. Serve hot.
