Someone had asked the other day about lowfat breakfasts without fruit or
sugar. Here is a rice pudding recipe that I often make the night before
and eat the leftovers for breakfast. Even though it's listed in the
dessert section of the cookbook (Simply Vegan by Debra Wasserman) it has no
added sugars and is very low in fat so I eat it any time of the day. You
can always omit the raisins if you want to avoid the fruit sugar also.
Note: the cookbook says it serves eight, but I can often finish it off
myself in about 2-3 servings, so don't count on it. :) Also using lowfat
soymilk should bring the CFF down even lower than what is listed.
Karen's Creamy Rice Pudding
(Serves 8)
2 cups pre-cooked rice
1 1/2 teaspoons cinnamon [I also add 1/2 tsp nutmeg]
1 tablespoon vanilla extract
1 cup raisins
3-4 cups soy milk [I always use the lower amount]
Mix all the ingredients together in a pot. Simmer until the mixture begins
to thicken (15-20 minutes), stirring occasionally. Remove from stove and
serve hot or cold.

% of calories from fat: 14%

Calcium: 47 mg
Iron: 1.5 mg

Dietary fiber: 2 gm
