I altered this slightly from the original posting I saw on the Veggies
Unite recipe board. I made it in a toaster oven, but I'm sure it was
originally intended for a regular oven.
BAKED BROWN RICE
2 cups brown rice
2 cups broth (any)
1 cup water
1/2 cup diced onion
1/2 cup julienned bell pepper
Preheat oven to 350 degrees. Combine all ingredients in casserole
dish. Cover and bake 1 hour or until rice is done.
Note: Original recipe also called for 1 cup dried tomatoes, but I
forgot to use them and it turned out just fine.
I cut the recipe in half when I made it, which made 2 good-sized
servings. While this was baking, I cut up some zucchini which I grilled
until soft and braised some mushrooms and onions in a red wine and
balsamic vinegar sauce. This was a really good meal.
