This is a recipe that my mom made alot growing up, and it is really
easy!
Mexican Rice
1 cup white rice (brown can be substituted)
1-2 cloves of garlic
1-2 green onions
1 8-oz can tomato sauce
salt and pepper to taste
Saute green onion and garlic in a non-stick pan until soft. Add rice
and saute until golden brown. Pour the tomato sauce into a measuring
cup and add enough water to make 2 cups. Add salt and pepper. After
mixture boils, reduce heat, cover and simmer about 15 minutes until
rice is tender.
I usually make this with Vegi-Enchiladas; my SAD husband loves it!
