This is from the cookbook "Fat Free and Flavorful" by Dr. Gabe Mirkin
ORANGE RICE:
1 and 1/2 cups orange juice
1 cup water
1/2 tsp salt
1/2 cup chopped onions
1 cup brown rice
2 oranges, peeled and cubed
Bring the juice, water, salt, onion and celery to a boil and simmer five
minutes. Add the rice; cover and simmer 40 minutes, or until the rice is
tender and the liquid is absorbed. Stir in the orange chunks and serve.
