Spanish rice
One more thing/idea...my favorite staple lately is brown Spanish rice
(add tomato sauce and chili powder), with lettuce, tomatoes and a small
sprinkle of ff cheese. My husband the bean-lover adds beans. Then we top
it with this dressing that is very similar to a fatty, secret recipe
served in a restaurant in Chico, CA (LA Hacienda...it's family-owned and
they never share the recipe). We bought some of the dressing and
experimented and came up with a fat-free version.
1c. nonfat sour cream (yogurt won't work for this-gets too runny)
3/4 c. tomato sauce
3/4 c. balsamic vinegar
4 Tbsp. sugar
1 1/4 tsp. black pepper
3/4 tsp. chili powder
Mix all together with a whisk. It's sort of sweet and sour with a tiny
bite from the chili powder.
