Risotto (there are good cooking techniques in the archive, so I won't repeat
them here):
1 cup rice (people say arborio is the best, but I used short grain [same
shape as arborio] and couldn't tell the difference. It is MUCH less expensive)
3 cups vegie stock mixed with 1/3 cup sherry
1 zucchini or other summer squash, diced
handful of baby carrots (or regular carrots, diced)
handful of dried mushrooms which I soaked first in stock (fresh are fine
too, but dried add a concentrated taste that is perfect with this dish)
Fresh pepper and FF Parmesan on top
