Cucumber Salad
2 medium size cucumbers, peeled and thinly sliced
Salt
1 cup white vinegar
1/2 cup sugar
1/8 teaspoon freashly ground black pepper
1 tablespoon chopped parsley
Sprinkle the cucumbers lightly with salt. Let stand 10 minutes. Rinse,
drain and place in serving dish.
Meanwhile, combine the vinegar, sugar and pepper and let stand 5
minutes. Pour over cucumbers and sprinkle with the parsley. Chill 2
hours.
