Here is a recipe in which I have substituted mustard for mayo:
Curried Tofu "Egg" Salad
1 block firm tofu
4 T. mustard
1/4 c. chopped celery
1/4 c. chopped red bell pepper
1/4 tsp. curry powder
salt and pepper to taste
Chop tofu into small cubes. Mix everything together. Chill for 1 hr. to
let flavors blend. (You can add a few tablespoons of nonfat yogurt and cut
down the mustard a little if you want--I don't because I'm lactose
intolerant.)
