A hot-weather pick-me-up from Marilyn Diamond's *The American Vegetarian
Cookbook*
Honeyberry Salad
Serves 3
10-15 minutes
3 cups honeydew melon balls
1 cup fresh blueberries
2 ripe peaches, sliced
8 large FROZEN strawberries
1 large FROZEN banana
Fresh fruit juice as needed
1. In a bowl, gently combine the melon balls, blueberries, and peaches,
taking care not to smash the berries and spoil the clear colors of the
other fruit.
2. Place frozen strawberries and frozen bananas separately in your
blender or food processor with a little fresh juice and blend to a smooth,
icy cream.
3. Spoon frozen fruit sherbet over fruit salad.
Variation: Spoon salad into cantaloupe halves. Top with frozen fruit
sherbet for an exotic fruit meal.
