Indonesian Pickled Cucumbers
Here is the recipe my mother (who lives in Indonesia) sent me after I
asked her about it:
Selada Ketimun dan Bawang (Pickled Cucumber and Onion Salad)
1 medium cucumber sliced
1 medium onion sliced
2 tsp salt
2 Tbsp sugar
2 Tbsp vinegar
1 cup cold water
1/4 tsp pepper
Mix together and chill before serving.
Mom says that she has modified this basic recipe to make it more to her
taste by using a medium to large cucumber, a small onion, 1/2 tsp salt, 1
Tbsp sugar, 4 to 5 Tbsp vinegar, 1/2 cup water, and "a sprinkling" of
pepper. She says to adjust depending on the strength of the vinegar, what
balance of sweet and sour you like, etc. Also, she adds thinly sliced
carrots and small cauliflower florets when she has them. Have fun!
