Pickled Beets

makes 2 pints
1.5 lbs. beets
1 cup water
1 cup sugar
1 cup distilled white vinegar
1 tsp. pickling spices
.5 medium onion, thinly sliced
Cook beets until barely tender. Drain under cold water and remove skins. Cut
into 1/8" slices.
Combine water, sugar, vinegar, pickling spices. Heat to boiling; add beet
slices. Return to boiling, reduce heat, simmer 10 minutes.
Transfer beets to a bowl, add onion slices. Toss.
Bring liquid to boil again, simmer until reduced (about 4 minutes).
Place beet-onion mixture in sterilized jars. Add hot liquid to cover. Seal.
Store. Chill well before serving.
