What to do with frozen tofu? Nikki Hazelton thinks it tastes
like chicken and suggests the following preperation. First
she thaws the tofu and squeezes the excess water out. While
I don't think this tastes much like chicken, I do think it
makes a great sanwich spread. Enjoy.
Tofu "chicken" salad
1 cup thawed tofu shredded or diced
1/4 cup diced celery
1/4 cup diced onion
parsley, chives etc.
fat free mayo to taste
