Tomato Salad with Mint and Spring Onions
4 firm red tomatoes
6 Spring Onions (scallions)
1/2 cup fresh mint leaves
2 Tablespoons lemon juice
1/2 tsp salt or to taste
2 teaspoons sugar
1/2 tsp chili powder, optional
Peel tomatoes (I wouldn't) and cut into thin wedges.
Finely slice spring onions and chop mint leaves. Mix
other stuff until sugar is dissolved, combine and mix
lightly. Cover and chill.
