Tricolor Salsa
1/2 c. red bell pepper, seeded and finely diced
1/2 c. yellow bell pepper, seeded and finely diced
4 t minced serrano chile, seeded
1/3 c apple cider vinegar
1/4 c. finely chopped fresh cilantro
2 T minced shallot
2 T fresh lime juice
1 1/2 t sugar
1/4 t salt
Combine all ingredients.
