To rehydrate small granule TVP, pour 7/8 cup boiling water over 1 cup TVP,
stir and let stand 5 to 10 minutes.
For chunk-size TVP or slices: pour 1 cup boiling water over 1 cup chunky
TVP. Stir, cover the pan and let soak for 5 minutes. To cook in a microwave,
cover tightly with plastic wrap and cook on high for 5-6 minutes; check after
2 minutes and add a little more liquid if needed.
SLOPPY JOES serves 8
2 cups, TVP, reconstituted
(whatever you use in place of oil, broth, water etc.
2 cloves garlic, minced
1 onion, chopped
1 green pepper, chopped
6 oz. can tomato paste
1/2 cup water
1 tsp. oregano
1/4 cup ketchup
1/4 tsp. cayenne
1 tsp. Worcestershire sauce (veg. kind, Robbies is good)
1 Tbsp. honey
Saute garlic, onion, peppers and TVP until soft. Add tomato paste, water and
seasonings and stir. If desired more water may be added. Serve on buns.
