One of my favorite things to make is spaghetti squash. You just cut it in 
half and bake it (there's usually a time and temp sticker on the squash). 
When it cools you can scoop out the inside and it comes out in strands like 
spaghetti. Top it with your favorite marinara and you've got a high-carb 
meal with more nutrients than plain ol pasta! My favorite marinara recipe is 
by Mollie Katzen:

Mollie's Meatless Marinara Sauce

2 c browned Ground Boca Burger Recipe Basics
veggie broth
2 c chopped onion
1 green pepper, diced
2 tsp basil
1 tsp thyme
1 tsp salt
13 oz can tomatoes
6 oz can tomato paste
1 Tbsp honey
lots of black pepper
4-6 cloves garlic, minced

In the veggie broth, simmer the onion, green pepper, herbs, and salt over 
medium heat until onion is soft.

Add tomatoes, tomato paste, honey, and black pepper. Bring to a boil, then 
lower heat and simmer partially covered for 20 min.

Add Boca Burger and garlic. Simmer about 10 more min.

After making this, I'll never go back to sauce in a jar! I make big batches 
and keep plenty on hand in the freezer. It's also a great topper for broiled 
eggplant.
