White spinach pasta sauce
This is a pasta sauce, that I have made many times for my part-time SAD
husband, and we both love it. Hope you do too!
1 8oz. container of fatfree ricotta cheese
1/2 cup skim milk
blend in cuisinart/ blender till creamy
in sauce pan, saute 1/2 cup chopped onion with several cloves of chopped
garlic, till blanched. Add basil, pepper and salt( sorry I never measure
my spices) Add 1 10oz package chopped spinach well drained. Can use fresh
steamed spinach. Cook unil spinach heated thouroughly. Add ricotta
cheese sauce and simmer until thickens. Tops any pasta, but works best
on a small shell type. On occasion, will add lemon juice to cheese to
vary the flavor. Enjoy, also great cold!
