Quick and Easy Zesty Pasta Sauce
various sliced mushrooms (as many as you like-I used 4oz)
1-2 cloves garlic, minced
red wine (I used beaujoulay sp?)
2 Tbs dried Italian herbs (any combo of rosemary, oregano, thyme, marjoram,
parsley, etc.)
28 oz can choice cut diced tomatoes(4c fresh)
1/2 tsp (scant) crushed red pepper
Saute mushrooms in a large nonstick pan for 2 min (Pam optional)
Add minced garlic and continue to saute 2 min more
Add 1/4 c red wine, 1 Tbs herbs & cook until reduced - 5 min or so
Add tomatoes and bring to a lively simmer
Add other 1 Tbs of herbs, crushed red pepper
You may add more wine if you like (1/4-1/2c)
Continue simmering for 15 - 20 min, stirring occasionally until tomatoes
soften and juices reduce a little
I served it tossed with herbed pasta and it was fantastic
