A recipes from my week at NIF:
BLACK BEAN SOUP (National Institute of Fitness)
1 pound black beans
1 C carrots, diced
1 C onion, diced
2/3 C beef flavor veggie broth (any veggie stock will work)
4 C water
1 C celery, diced
1 T garlic powder
i t cumin, ground
Cook beans in the water on low heat about 2 hours until done. Once
the beans are cooked, add the seasonings. In a seperate saucepan, cook
the vegetables until tender, add to the beans at the last minute (so
they don't turn black). Makes 8 one cup servings.
