Cabbage Soup
light spray of olive oil in Misto sprayer
1 large head cabbage, chopped coarsely
1 large Vidalia or sweet onion, sliced thinly or chopped
2 cans reg. or lower fat tomato soup
2-3 cans of water
2-3 bay leaves
fresh ground pepper
Lightly spray bottom of pot with olive oil. Over medium heat, put in onions
and cook until tender. Add chopped cabbage, tomato soup and water to the
onions. Mix well so that the soup and water are mixed well with the other
ingredients. Then add the bay leaves. Simmer for approx. 30 minutes until
cabbage in tender. Remove bay leaves and add freshly ground pepper. This is
truly delicious ! Enjoy !
NOTE: this soup is best made a day ahead and allowed to sit with the bay
leaves in it to increase the flavor.
