Crockpot Bean Soup
1 lb. dry asst. beans, any kind
1/2 cup or so pearl barley
1 28 oz. can chopped tomatoes or equiv. fresh
2-3 carrots, chopped
2-3 stalks celery, chopped
1 large onion, diced
2 bay leaves
1/2 tsp thyme
1/2 tsp marjoram
salt+pepper to taste
Veggie stock (or water) to fill pot
Throw it all in the crockpot in the morning, and you've got dinner when
you get home.
Other things you can throw in -
Fennel bulb, chopped
Peas, lentils, limas, etc
Corn
Pasta
Anything you can think of
Note: The dry beans are *not* cooked first - they cook just fine over the
course of the day, but if you are sensitive to the oligosaccharides in
them (the stuff that makes you noisy when you eat beans), be advised!
