I threw this together yesterday and it is very yummy, also REALLY
adaptable I'm sure. My "recipes" are rather slapdash, please forgive.
******Cyn's Lentil Soup*****
1 bag dried lentils, rinsed & drained
1 cup each diced carrots, celery, onion
1 T minced garlic
6 T (or maybe more) veggie broth powder
Thyme, crushed cumin seed, bay leaves, pepper
1 lg can tomato paste
3 or more T garam masala
Lots of water (to cover, I kept adding)
Simmer for 1-2 hours, throw in a cup or so of rice. Add more water as rice
swells, and more seasoning to taste. Hot sauce is a good thing. Simmer
until rice is done. Eat and accept the awed compliments of non-cooks. :-)
