Thanks for all your wonderful recipes and ideas. Here is one from
weight watchers which I love because it is not only delicious but very
low calorie (and unlimited on that food plan!)
Favorite Vegetable Soup
1/4 cup diced onion
2 packets (or equivalent) vegetable broth
2 garlic cloves
1 1/2 cups thinly sliced zucchini
1/2 cup each thinly sliced carrot and chopped seeded tomato
1 tsp chopped fresh parsely
1/4 tsp basil
1/8 tsp pepper
(if you like your food spicy - crushed red pepper or a chipotle pepper)
Combine onion, vegetable broth, garlic and spicy seasonings, "saute",
Add remaining ingredients, cover and cook over low heat, stirring for
about 10 minutes. Add 2 cups of water and bring to a boil. Reduce
heat, cover and cook until vegetables are soft. Remove about 1/2 of
the vegetables and set aside. Either put rest of soup in a blender or
using a hand blender, puree the soup. Put the rest of the vegetables
back, and you have soup!
I usually double or triple this recipe, and if I don't have fresh
tomatoes on hand a can of crushed has worked just fine. I find this
soup to be light enough to be enjoyable in the summer.
