Green on Green Gumbo

6 Tablespoons butter budsŪ
1/4 Cup flour
2 Teaspoons creole seasoning
2 Medium onions -- chopped
3 Cloves garlic -- minced
16 Oz frozen okra -- sliced, thawed
14 1/2 Oz vegetable broth
1 Teaspoon dried thyme
2 Tablespoons vegetarian worcestershire sauce
1 Cup dry white wine
1 Pound fresh spinach -- rinsed and stemmed
1 Pound swiss chard -- rinsed and chopped
2 Cups beet greens -- rinsed and chopped
2 Cups celery leaves -- chopped
1 Teaspoon salt

In a Dutch oven or large soup pot, add butter buds and flour. Cook, stirring
until flour turns golden, 5-7 minutes. Do not brown or soup will be bitter.
Stir in Creole seasoning.
Add onions and garlic. Cook over medium heat, stirring occasionally, until
onion soften, about 3 minutes. Stir in okra, cover and cook, stirring
occasionally, until okra is just tender, 5 to 7 minutes. Add broth, thyme,
Worcestershire, and wine. Cook, stirring, 5 minutes.
Gradually add greens, stirring them gently into stew. Cover and cook until
greens are tender, 15-20 minutes. Add salt.
Serve gumbo over cooked white rice with hot sauce on the side.

NOTES : In a pinch, use frozen greens.
