This is a recipe from the side of can of Sainsbury's (UK supermarket)
lentils, suitably adapted for this list.
SPICY LENTIL AND TOMATO SOUP
Ingredients:
1 medium onion, chopped
2 cloves garlic, crushed
2 tsps garam masala
1 tsp ground coriander
1 tsp turmeric
1/2 tsp chilli powder
1 can (420g - about 1.5 cups?) green lentils, drained
1 can (same size) chopped tomatoes (I put peeled toms in a blender)
450 ml / 3/4 UK pt / 2 US pts vegetable stock
Method:
1.Saute onions and garlic in a little of the stock until soft
2.Mix all the spices with a little water to make a paste and add to the onions.
Cook for 2-3 mins
3.Add lentils, tomatoes and stock, cover and simmer for 30-35 mins
