5 Lily Chowder
adapted loosley from Bon Appetit Mag
2 pounds onions, chopped
4 shallots, chopped
3 leeks, sliced thin
5 cloves garlic, minced
1 stalk celery
2 tablespoons chives, minced
2 teaspoons lemon zest
1/2 cup dry white wine
5 cups veggie or chicken flavor veggie broth
1 teaspoon thyme
sprinkle of black pepper
Saute onions, shallots, garlic and 1/2 of leeks in white wine, add
thyme,
add broth and simmer till all is tender.
Just before heating up to serve, add remainder of leeks and the sliced
celery stalk, simmer just 5 minutes, till tender crisp.
Garnish each serving with chives and lemon zest.
