Minestrone soup w tortellini or ravioli
"saute" several cups of a compbination of the following until slightly
cooked:
Onions
Garlic
Sliced Zuchini
Sliced carrots
Cubed potatoe
peas
chopped celery
Add one can of stewed tomatoes and two cups of Healthy choice ( or any
other lowfat brand) Pasta Sauce and 4 cups water. Simmer for about 45
minutes to an hour.
Add one Package ( 12 oz.) of lowfat totellini or ravioli. Check the
packages, I have seen lowfat ones with MORE fat than the regular ones!
Cook ten more minutes and then thicken the soup with mashed potatoe
flakes ( about 3/4 cup).
