Split Pea Soup
Into the crockpot---
2 cups dried split peas
2 quarts water
1 large or 2 medium onions, diced
2 carrots, sliced
3 - 4 ribs celery sliced
1 package St Yves vegetarian slices, Canadian Bacon style, chopped (optional)
1 - 2 tablespoons vegetarian powdered broth mix, I like the chicken flavor
(optional)
salt and pepper to taste
Add more water as necessary for the consistency you like. Cook on high to
get it hot, if you have time, then lower to low or medium low. Don't fill
the pot too full, this can foam up.
Then stir, adjust seasonings and serve. If you like it smooth, take out 1/4
or 1/2 of the soup and blend, add back and stir.
All this needs is some good bread, or even corn bread and supper is ready!
