Hearty Low Cal , Plenty filling, Stew
Crockpot, Ok Yield: 6 servings
1 med Onions, chopped,
2 stalks Celery,
1 small Winter Squash, grated,
1/2 c Mushrooms,quartered,
1 small head cauliflower, grated,
1 red bell pepper,chopped.
3 x Garlic cloves, crushed,
2 T hot chili powder
2 c Water ,
1/4 c Soy sauce,
1/4 c diet apple cider or free and clear
1/2 teas Ginger, grated ,
1 teas or to taste fresh cilantro,
1 tea grated orange or lemon peel
2 teas gumbo file or other thickner
Combine all ingredients, except the cornstarch, in a large pot. Bring to a
boil, lower heat, cover, and simmer about 1 1/2 hours until vegetables are
tender. Mix the cornstarch in 1/2 cup water. Slowly add to stew. Stir until
thickened.
This can also be made in a slow cooker Crock Pot.
Follow above directions. Cook on high 6 hours or on low for 12. Add the
cornstarch mixture just before serving and stir until thickened.
