Stuffed mushrooms
* remove stems from the mushrooms
* use the stems to make duxelles, let that cool
into the duxells, mix
* minced parsley
* braise/deglazed finely minced onion && celery (stock or red wine)
* at the end of the onion cooking, add rosemary or sage
* roasted garlic
* for mild stuffing, use breadcrumbs as a filler
* for stronger flavor, use kasha as a filler (and increase spicing)
* season with salt && black pepper
* stuff the mushrooms && bake in a non-stick pan at 375 F for
about 20 minutes (that's from memory so don't quote me ;)
