NOt a recipe per se, but I make a white bean and basil spread
for sandwiches, especially good with ripe tomatoes. I mix maybe
a couple of cups of cooked beans with a bunch (4-5 T?) of chopped
basil, a squeeze of lemon, salt and pepper and a little nonfat
cream cheese (2 ounces or so) in the food processor. I usually
add a clove or two of garlic as well (as long as I know I'll
be near a toothbrush after lunch :-) ).
I've also mixed white beans with about 1/4 to 1/3 cups of chopped
mixed fresh herbs (whatever I dig up from the garden) along with
a little lemon juice and cream cheese. Good as a dip if you
thin it out, or as a spread as is.
