Corn Chowder
This recipe is rich and creamy though it contains no dairy products.
2 c. almond milk
2 c. water
1 c. chopped onions
1 c. chopped potatoes
1/2 c. chopped celery
2 tbsp. parsley
1 tbsp. olive oil
1 tsp. garlic
1/2 tsp. fresh basil
salt and cracked black pepper
2 tbsp. miso mixed with 3 tbsp. water
1 1/2 c. corn kernels
1/4 c. nutritional yeast
Combine all ingredients except for corn, miso, yeast and basil.
Bring to a gentle boil, reduce heat, cover, and simmer for 15 min.
In a small bowl, mix miso and water until creamy.
Add miso mixture, corn, yeast and basil to soup pot, stirring well.
Simmer 5 minutes.
Makes 7-8 cups
