ITALIAN PASTA SAUCE
1 tsp. olive oil
1 pressed clove garlic
1/2-1 lb. seitan (or other meat sub, opt.)
2 c. Italian tomatoes, cut or ground
1 bay leaf
1/2 c. tomato paste3/4
1/4 c. fat-free vegie broth
1 tsp. sea salt
1/4 tsp. pepper
1/2 c. sliced mushrooms
1/2-1 T. fresh basil ( 1½ tsp. dried)
1/2-1 T. fresh oregano ( 1½ tsp. dried)
Grated Parmesan or Romano cheese
Heat oil in large pot and add garlic, seitan, tomatoes, tomato paste,
broth, salt and pepper, and bay leaf; simmer uncovered 45 minutes. Add
mushrooms, oregano, and basil; simmer 15 minutes more. Serve over hot
pasta with cheese, if desired. *If less seitan is used, increase mushrooms
(use whole buttons or chopped Portabellos for a chunkier sauce).
