The Eating Well Cookbook has a delicious way of caramelizing onions to put
on their "Pizza Provencal."
Caramelized Onions
2 cloves minced garlic
6 cups thinly sliced red onions
1/2 cup medium-dry red wine
1/4 cup balsamic vinegar
2 T sugar (or other sweetener that can be heated)
1 tsp. dried thyme
1 tsp. dried marjoram
1/2 tsp. salt
Combine ingredients in a large saucepan. Cook, covered, stirring
frequently, over low heat for 45 to 60 minutes, or until the liquid has
evaporated.
They have you cool that, then spread it over pizza dough along with sliced
plum tomatoes and roasted peppers. Top it all with baked garlic, fresh
basil leaves, rosemary and oregano. It is WONDERFUL!
