All the talk about squash lately got me thinking. I seem to like squash once in
a while when I get it at other people's houses, but whenever I try to make one
myself I wind up throwing it away because it's stringy and grainy and not very
appealing. I just thought maybe I really didn't like squash, but is it possible
I just need to get the right kind of squash or maybe I'm not cooking it right?
Also, how about some recipes for vlf/veg dinners entrees that don't require
beans or eggplant, which my SO and kid won't eat. I can do pasta & tomato
sauce, pizza and stir fry and soup, but besides that I hardly know what to cook
them now that they are willing to eat meatless most nights. Suggestions?
