Thanks again for all your suggestions for baking/ dry frying felafel. I
will try making them this week and will let you know how it went.
As for cooking for grandparents: Someone (I think Sarah) was looking for
ideas on how to convert her grandparents to a low fat lifestyle. How about
a fat free or low fat quiche. I love using Egg Beaters as an egg
replacement. Quiches are so easy to make and you can be creative! I had
two SAD friends over for dinner and made a Mushroom - Onion - Low fat
cheese quiche and a Broccoli - Low fat cheese quiche. Both were
excellent!! With all that veggie flavor - you can't possibly miss the
meat!! Plus, they freeze well. I cut them into pieces (after allowing my
friends to take home lots of leftovers :) ) and placed them in
TUPPERWARE containers in the freezer.
Another idea is Veggie Schichkebobs (I think I just slaughtered that
spelling) ... anyway, marinate veggies in balsamic vinegar or fat free
Italian dressing ... veggies can include: potatoes, tomatoes, eggplant,
squash, red/ yellow bell peppers, red onion, mushrooms ... place on grill
until done (watch the tomatoes though, they cook quickly). Serve with
couscous or a light summery salad (pasta salad with a vinegar-sugar
dressing - YUM!!!). VERY filling and delicious! I can't wait until we get
our GRILL!!
